Easy spiced muffins: wheat free, can be dairy free, can be gluten free, nut free, sugar free

Muffins are very handy things to have on hand, but it’s taken me a while to find a recipe that’s quick, easy, relatively crap free, and we all like. I ended up adapting one, and here it is. (It’s super forgiving, so feel free to mix it up, yo.)

Ingredients:

  • 3 eggs
  • 1 can drained pear halves
  • maybe 1/4 cup melted butter or coconut oil. I’m terrible; I never measure it, but it always turns out ok.
  • 1/2 cup coconut flour
  • 1/2 cup oats (preferably soaked and dehydrated) (use gf if you can’t tolerate normal oats)
  • 1/4 cup chocolate chips or sultanas or other dried fruit of choice, or mixture thereof
  • pinch baking soda or powder
  • spices to taste. I tend to use a mix of cinnamon, allspice, cloves, ginger. Just be careful if your 35mo is in charge of putting the ginger in…

Method:

  • Preheat oven to 180.
  • To melt butter/oil, put a pot with some water on the stove and turn to medium high – place butter/oil in heat resistant glass or stainless steel jug and place jug in water.
  • In standing mixer or bowl with hand mixer, beat eggs lightly. Or not so lightly. It really doesn’t seem to matter.
  • Add drained pears. The beaters break them up nicely, though you might need to encourage them through the blades, being careful not to get the spoon caught.
  • Oil/butter should be melted by now. Pour it in.
  • Add all other ingredients and mix till a chunky, thick batter.
  • If you want this to make 12 muffins, only half fill the cups. Otherwise 3/4 fill ’em and see how many you get. You’ll need to smooth them a bit to get a good consistency.
  • Bake for 15-20 minutes. Allow to cool if the kids let you.

These muffins are super quick to whip up for unexpectedly required morning teas and so easy the kids can practically do it themselves. Practically. Also much more filling than grainflour filled muffins and won’t make you feel yuck 🙂
